The Waddesdon Pauillac was originally bottled and labelled for the Rothschild family with grapes sourced from the vineyards of Mouton, Clerc Milon and d’Armailhac. This Pauillac is made exclusively for Waddesdon by the legendary Chateau Mouton Rothschild. The first vintage produced was over a decade ago, and the style and quality remains consistently impressive.
After an hour in a decanter our Rothschild Collection Pauillac awakens from its slumber to reveal a nose of cassis, charred vanilla, black cherry and cedar. There’s evidence of the ripeness this vintage possesses with a plump fruit-forward palate which is tapered by fine tannins and well balanced acidity. It’s clearly Pauillac and true to the ‘house’ style – yet it’s accessible and attractive now and doesn’t require a decade patiently waiting in the cellar. Decant for an hour and enjoy this Paulliac with a roast beef.
